This time I'm gonna share how to make Puff Pastry, but for this Recipe is based by Mr. Edd from Amsterdarm. He is a lecture in some institute over Amsterdarm. 3 days before I joined Diklat in Balai Diklat Indstruies, I already Joined Mr. Edd class, but only 1 day. And I don't even know how the basical Puff Pastry by Mr. Edd himself. But this time I learn it from Mr. Ahamad Yani, my classmate. He's doing the showing of making Puff Pastry before we're going to make it. So today, I learn and make the Puff Pastry Dough with my partner, Ms. Ulhy.
So here, the basic Recipe of Puff Pastry by Mr. Edd
- 500 gr Hard Flour
- 400 gr Pastry Fat
- 325 ml Water
- pinch of Salt
How to make it :

1. Cut the fat into pieces
2. The ingredients
3. Mix the fat pastry, flour, and salt with rubbing methode (don't over mix)
4. Pour the water little by little

5. Third folding
6. Final look the Puff Patry before chilling overnight
note :
- Each folding processing finish, chill it in refrigerator then do the same thing with the other folding processing
After we do the Puff Pastry Dough, we continue to measured the ingredient for Diklat "Rumput Laut" Participans for 2 days.
