DAILY REPORT 18 "PIA & FERMENTED FOOD"

Yuhuuuu Good Day EveryOne. Back again with my another Daily Report at Practical Week.


Today me and my friends (Hardy, Aye, Wahyu and also Aldi) are going to made Fermented Food and Pia. The Fermented Food which is Food that fermented with some additional ingredients and it have to be keep for more that 2 days. Our Fermented Food was Tape. Tape is a traditional food from South Sulawesi which is Black Rice soaked for a couple hour and you cook it until done and after that you put the special yeast (which is help the rice fermented and let the sweet taste out) and you keep it for couple days.

TAPE RECIPE :

INGREDIENTS
- 1/2 ltr Black Glutinous Rice 
- 1 ltr White Glutinous Rice
- 6 pcs Special Yeast (for Fermented the Rice)
- Banana Leaves

HOW TO MAKE
- Soak al the glutinous rice for about seven times and than soak again with another water for about 30 minute
- Steam the rice until cok
- Prepare hot water for pour into cooked rice
- Soak Banana Leaves into hot water, and pour into the cooked rice
- Steam again until tender and sticky each other
- Sprinkle the yeast and sugar and than round it and keep it in bowl with banana leaves. Close it with thight Napkin and leave for about 2 days until the fermented use well.



                                              

Next is Pia. Pia is a traditional food from Yogyakarta. Actually this food basically known as Chinese Food. Pia is a traditional snack made from two kind dough of flour. The making process use lamination which is slip the butter inside the dough. That's why Bakpia is crispy and crunch (until the texture so crumbly). Today me and my friend made with two kind of Filling which is Chocolate and Green Bean Paste

PIA RECIPE :

INGREDIENTS

I (For the Skin)
125 gr All Purpose Flour
65 gr Hard Flour
2 tbsp Sugar
1/2 tbs Salt
100 ml Water
200 ml Vegetbale Oil (50 ml for Dough, 150 ml for soak the Dough)

I (For Lamination)
65 gr All Purpose Flour
25 ml Vegetable Oil
1/2 tbsp Margarin

FILLING
200 gr Green Bean
100 gr Sugar
150 ml Fresh Milk
